Beans With Pork & XO Sauce

Serves 2

1 tsp corn starch
1 tsp sugar
2 tsp Shaoxing wine
1 tbsp soy sauce
1/4 tsp dark soy sauce
1/8 tsp salt
1 tsp ginger, grated
1 tsp sesame seeds
150g pork mince

150g green beans
4 garlic cloves, chopped
1 chili, chopped
2 tsp XO sauce
Pepper to taste

1. In a small bowl add all marinade ingredients. Stir well and pour over the pork. Marinate for 30 minutes.

2. Meanwhile, heat enough oil over medium high heat to deep fry green beans. Fry until they become wrinkled. Transfer onto paper towel to soak up excess oil.

3. In a wok add 1 tablespoon vegetable oil, heat over medium high heat. Add garlic and chili and stir fry until fragrant about 30 seconds.

4. Add the pork and stir fry until cooked. Add the green beans, XO sauce and pepper. Stir until combined.

5. Serve with rice.
